Eggs 3 Oil 2 tablespoons Green chillies chopped 2-3 Tomatoes finely chopped 2 medium Red chilli powder 1 teaspoon Turmeric powder 1/4 teaspoon Cumin powder 1/2 teaspoon Coriander powder 1 teaspoon Salt to taste Sugar 1/2 teaspoon Capsicum chopped 1/4 coriander leaves chopped 2 tablespoons Processed cheese grated 2 tablespoons
Step 1 Heat one tablespoon oil in a non-stick pan. Add green chillies sauté and add onions. Sauté till golden brown. Step 2 Add tomatoes, sauté for two minutes on high heat. Step 3 Add rec chilli powder, turmeric powder, cumin powder, coriander powder and stir well. Step 4 Add salt and mix well. Sprinkle some water and mix well. Step 5 Add sugar and capsicum and mix well. Step 6 Switch off heat and allow it to cool. Step 7 Break the eggs in a bowl. Add little salt and beat well. Step 8 Add the prepared mixture to the eggs and mix well. Step 9 Add coriander and mix well. Add cheese and mix. Step 10 Heat remaining oil in a nonstick pan. Pour the mixture and spread evenly. Step 11 Lower the heat. Cover and cook for two to three minutes or till eggs are cooked. Step 12 Remove in a serving plate and serve hot with toasted bread.
